At Il Fiorello, we use a modern continuous-system olive mill made by Pieralisi, Italy, the world’s leading manufacturer of olive oil production machinery. The mill can process 1,700 pounds of olives per hour.
There is no greater delight than standing at the final separator, the cucciolo (“little puppy”) as the olives are milled, and dipping pieces of fresh bread in this delicious golden-green oil and savoring the rich taste.
