Our grove in Green Valley, California, is planted with a mixture of the Italian varieties: Frantoio, Leccino, and Pendolino. The Suisun Valley grove will be home to numerous international varietals.
We chose the Frantoio variety for its robust flavor and slight but piquant, peppery taste. The Leccino has a bright olive flavor with a hint of butter that is slightly richer tasting than the Frantoio. Pendolino is a brilliant green olive that gives our blends a wonderful “center” or balance.
