Ingredients
2 cups shelled Fava beans
2-3 garlic cloves, finely minced
2 tablespoons chopped
Italian parsley
1 tablespoon Eureka lemon juice
Salt and pepper to taste
Grated Parmesan or Grana Padana cheese to garnish
½ cup extra virgin olive oil (try it with our Frantoio Extra Virgin Olive Oil)
Process
- In a saucepan combine the fava beans and enough water to just cover the beans
- Bring to a boil and cook until the beans are tender and the cover splits (about 5-7 minutes)
- Rinse under cool water so you can handle the beans
- Slip off the “cover” of the bean
- Sauté the garlic and parsley for 2-3 minutes in the olive oil
- Add the beans and the garlic mixture to a food processor and puree
- Add salt and pepper to taste
- Stir in the lemon juice and adjust the seasoning to your taste
Spread on grilled crusty bread with extra oil for dressing. Garnish with the grated cheese.
